France: Herbs


The delicate herb chervil is so French and I have yet to see it in any other cuisine. Lavender shows up all over the Mediterranean region but especially especially loved by Provençal bees, producing a heavenly honey. We kept bees for awhile and made our own lavender honey (mint, too!) by slightly warming dried lavender, leaves, stems, and all, in their honey. It was the most popular item in our farmstand.
