French tarragon is highly aromatic with a subtle licorice flavor with touches of vanilla, mint, pepper, and eucalyptus. A fresh, spring taste adds French elegance to Vinaigrettes, Fines Herbes, Potato Salads, Egg Salads, and Herb Vinegar. Use raw or add at the end of cooking. Avoid the more bitter tasting Russian tarragon. You want the true French variety, mais oui!
