There are so many mint cultivars, each with their own very specific flavor and aroma. Crush the leaves to relase their oils. I like spearmint over peppermint because it's less pungent. Pineapple Mint is lovely for garnishing an Elderflower Cordial. Apple Mint is fuzzy and wonderful for Herbal Tea.
Use in savory dishes such as Yogurt Sauces and Indian Mint Chutney. Sweet recipes such as Simple Syrups, Flavored Honey, and Infused Waters sing with the addition of a sprig of mint.
