A sweet and spicy smelling herb, lighter in flavor than winter savory with a peppery, earthy flavor that is a cross between thyme, mint, and pine and just a hint of marjoram. A main ingredient in Herbes de Provence. Use in egg dishes, soups, stews, bean dishes, salads, sauces, and cabbage dishes. Summer savory especially loves any kind of bean: dried, fresh shelled, snap, or pole bean.
