Also called Blue Giant Hyssop. The leaves and flowers are edible with an anise or licorice flavor. A favorite of bees. The flowers can be used by plucking off the tiny individual florets to garnish salads, cakes, desserts, and beverages.
The leaves dry well, retaining their taste and fragrance.
Use in Herbal Teas, Simple Syrups,
Cordials, and Infused Waters.
