Spices come from the bark, buds fruit, roots, seeds or stems of various plants or trees. They are the distinguishing element of many cuisines around the world. Although some of these spices are utilized in multiple countries, cumin and coriander being the stand-outs, the combinations are what define each region. Choose whole spices over ground when possible and invest in a good grinder for the freshest, longest-lasting, and most intense flavors. Store in glass jars in a cool, dark place for up to 6 months.
Cooking with Spices Add whole spices at the start of cooking to allow their flavors to permeate the oils and aromatics.
Then add ground spices, adding turmeric, nutmeg, and asafoetida towards the end to prevent scorching.
Toasting Spices in a dry pan is another way to release their essential oils.
