Also known as Himalayan black salt, Sulemani namak, bire noon, bit lobon, kala loon, guma loon, or pada loon. A kiln-fired rock salt with a sulphurous, egg-like pungent smell. Use sparingly.
Add to egg dishes, chutneys, fruit, raitas, and sweet potatoes.
For an eggy taste, add a pinch to 1 cup egg replacer.
