Also called achiote. Used in many foods as a natural colorant with their brilliant orange and yellow colors. For cooking, annatto seeds have a slightly bittersweet, nutty, and peppery flavor with hints of mace and mint. The seeds are either ground and added to stews or cooked whole to make Achiote Oil for Mexican Yellow Rice.
