Also called ajowan, ajowan caraway, ajave seeds, ajvain, ajwan, bishop’s weed, Ethiopian cumin, omam, and omum. Small, oval seeds similar to cumin, fennel, or lovage but with a more pungent, bitter taste. Ajwain smells like thyme but tastes similar to a mix of mint, oregano, and anise. Quite a unique spice.
Use whole and sparingly in combination with other spices in Tarka, Pakoras, Indian Dals, and Indian Curries.
