Fenugreek seeds are hard squareish seeds. They have a
nutty, maple syrup, burnt sugar flavor with a subtle bitterness. Cooking removes the bitterness. The seeds can be toasted to reduce their bitterness. The leaves are also used in Indian cooking.
Use in Indian Garam Masalas, Ethiopian Berbere, Ethiopian spiced butter Niter Kibbeh, and Moroccan Ras el Hanout.
