Amchur

Also called amchoor, aamchur, or amchur. A dried mango powder that adds a sour, tangy citrus flavor to dishes. Unripe mangoes are dried in the sun and then ground into a powder. A combination of tart and fruity, it is a fantastic stand-in for lime when zing is called for.

Use in Pakoras, Indian Dals, and Indian Curries.
