Also known as hing. A ground powder from a dried plant resin. A pungent sulfurous odor, which mellows during cooking. Used in Indian cuisine as a substitute for garlic and onions, especially in Jain Brahmin dishes. Excellent with potatoes and cauliflower in Indian Curries.
*Asafoetida is often processed with wheat flour, therefore, it should be avoided by those following a gluten-free diet.
