Mexican Tarragon

Tagetes lucida
Mexican Tarragon

Also called Texas tarragon, false tarragon, Mexican mint marigold, winter tarragon, and sweet-scented marigold. The leaves have a licorice flavor that makes them a great substitute for French tarragon. The plant produces many yellow, single marigold-like blossoms that are edible and make a bright garnish to salads.
