The fruit and leaves are used in Southeast Asian cuisine. Formally known as kaffir lime, a derogatory ethnic slur meaning infidel. The lime rind and crushed leaves emit an intense, bright citrus fragrance. Fresh leaves are best but hard to find. The leaves can be used fresh, frozen, or dried.
Use in Thai soups, Thai Curry Pastes, and Thai Curries. Remove whole leaves before serving to prevent injuring guests.
