Curry leaves are different from Indian or Thai curry spice blends. They add an unmistakable sharp, citrusy flavor similar to anise and lemongrass. A bit hard to find unless you have an Indian grocery nearby. Once you cook with these leaves, you'll want them for all of your Indian dishes.
Use in Tarka, Indian Dals, and Indian Curries.
