India: Aromatics

A base for most of the world's cuisines, unless you are following a diet that avoids onions and garlic. "Asfoetida", or hing, is a spice often used in Indian cooking as a substitute for onion, especially in vegetable dishes, curries, and stews.

Onion

Onion

Topping this list are onions which are used in every cuisine around the world, except for ayurvedic recipes. Red onions span the middle-east, northern Africa, and India. Check out onion's "Love Affairs".

Shallot

Shallot

In Asian and Southeast Asian cuisine, shallots are used like they are growing on trees. Here they are a bit pricey and tiny from my garden. I feel luxuriously pampered when I cook shallots. Check out shallot's "Love Affairs".

Garlic

Loved around the world for it's pungent flavor. Grated is best for Indain cuisine.Check out garlic's "Love Affairs".
