Stinging Nettle

Urtica dioica
Stinging Nettle

Also known as common nettle, burn nettle (although not all plants of this species sting) or nettle leaf. Used in the spring in soups for it's nutritional value.

Handle with gloves. A farmer told me that it loses its sting in the freezer, just pop into a plastic bag. The leaves dry well, retaining their taste and fragrance. Use for Herbal Teas.
