Curry leaves add an unmistakable flavor similar to a combination of anise and lemongrass. A bit hard to find without an Indian grocery nearby. I stock up a couple of times a year and preserve the leaves in the freezer. Dried leaves are available online but are less flavorful, use double the amount. Once you cook with these leaves, you'll want them for all of your Indian dishes. Fresh curry leaves can be frozen for longer storage.

Use in Tarka, Indian Dals, and Indian Curries.
