Borage

Borago officinalis
Borage

Also known as starflower. An annual herb with edible leaves and cornflower-blue, star-shaped flowers. The fuzzy, prickly leaves have a mild cucumber flavor which are best cooked. Popular in Italy for stuffing ravioli.

Use the honey-sweet flowers to garnish cakes and cupcakes. Scatter on top of Green Leafy Salads, Fruit Salads, and add to Infused Waters. Freeze flowers in ice cube trays for elegant cocktails!

*Pregnant and lactating persons should avoid consuming borage flowers.
