The buds, petals, sprouts, and seeds are all edible. The unopened green flower buds can be cooked by blanching and then pan-frying in oil or butter and aromatics for a slightly nutty taste similar Jerusalem artichoke. The orange and yellow petals can be plucked and scattered on top of salads but they are quite bitter. Fair warning.
