Umami bombs. Shiitake mushrooms are readily available but I've found some exotics at my healthfood market, too. Some of us will not be trekking through the woods in search of edible mushrooms. A limited regional selection of fresh mushrooms can be found at my local farmer's market but if the more exotic are desired then dried mushrooms are our opportunity to enjoy the delights and differences of truly wild mushrooms.
