Cucumber


95% water with a mild melon flavor. The four main types are: Slicing - which are smoother and more uniform in shape and color. The US variety has a tougher skin than the European and Persian types with their thinner, more delicate skin, Pickling - which are shorter and more irregular in shape with bumpy skin covered in tiny spines, Gherkin - which are also called cornichons, are teeny-tiny and typically pickled, and, finally, Burpless, which are sweeter with a thinner skin making them easier to digest.

Too many cukes from the garden? Chill, slice and place over eyes to soothe and reduce puffiness.
