Ground Chili Peppers

Another unique application of chile is in its designation for the powdered form of dried chili peppers. Gastronomes will tell you that chili powder (with an "i") usually implies that the powder consists of ground-up dried chili peppers mixed with a blend of other spices, whereas chile powder (with an "e") is reserved for a pure powder of dried chili peppers only. Aleppo is my favorite but every now and then I'll add a sprinkle of Maras. They're both a little fruity and on the mild side. "World Cuisines" guides you through the amazing diversity of ground chili peppers used around the world. Ground chili peppers are available by mail order in Pantry: Ground Chili Peppers. The dried and ground chili peppers are available online the in Pantry. Search out your local ethnic markets, too!
